Cauliflower Crust
Pizza Sauce
  1. You will need about two cups of finely grated cauliflower. Typically this is about equal to 1 head of cauliflower. You can either put the cauliflower through the food processor. In which, you want to remove the stalk and cut the cauliflower head to be put through a food processor. You can also grate it by hand on a cheese grater. In which case, you’ll want to leave the stalk on as a handle for when you’re grating it.
  2. Process the cauliflower in one of the above methods until finely grated.
  3. Either steam the cauliflower or cook in the microwave for a few minutes. The goal is to cook it enough that when you can squeeze the water out of it.
  4. Once the cauliflower is cool, place it in a kitchen towel and squeeze as much water out as possible.
  5. In a mixing bowl add the cauliflower, Parmesan cheese, garlic and oregano. Mix thoroughly. On a pizza pan place a sheet of parchment paper and form dough into a pizza crust shape.
  6. Place in a 400 degree Fahrenheit oven on the center rack and bake until gold and brown.
  7. Mix pizza sauce ingredients in bowl. Once the crust has cooled flip it over onto a wire pizza pan and top with sauce and whatever other toppings you prefer.
  8. Place back into the oven at 450 degrees Fahrenheit. Cook until cheese is melted and bubbling.
