Mashed potatoes are one of the all-stars of dinner side items. From steakhouses to country kitchens and everywhere in between mashed potatoes are well loved. They are creamy, buttery, delicious and hearty. I love mashed potatoes, and I’m tired of going without but I don’t have to and neither do you. Keto Cauliflower Mashed Potatoes are one of my all-time favorite keto sides. It’s extremely easy to make and it’s so delicious that you won’t even care that it’s not the real thing!
If the name hasn’t already given it away, the main ingredient in mashed potatoes is…potatoes. On keto, potatoes are forbidden fruit or tuber or whatever. They are for all intents and purposes, pure carbs. You would think that that would make mashed potatoes especially hard to recreate on a ketogenic diet, but you would be wrong. As it turns out, keto mashed potatoes are super easy to make and downright scrumptious. The other main ingredients in mashed potatoes tend to be pure keto, however. These can include heavy cream, cream cheese, butter, and cheese, depending on whose making it. Therefore, we simply need to find a replacement for the potato.
Cauliflower doesn’t get the credit it deserves by the general public. But we in the keto community know better. Cauliflower is damn near close to magic when it comes to making faux versions of carb classics, mostly because it has very little taste on its own. It tastes like whatever it’s seasoned with. Keto Cauliflower Mashed Potatoes is a recipe where cauliflower shines exceptionally bright. With a little boiling and blending cauliflower becomes extremely smooth. Add in some cream cheese and butter and it gets extra creamy too. You don’t have to stop there. Add in garlic, white cheddar, chives, whatever you want. This is one of those dishes that is extremely easy to customize to your own tastes. Just toss whatever you want to add into the food processor with the rest of the ingredients. I kept it very simple in this recipe. Think of it as a template. It’s already delicious. But if you want to jazz it up, even more, go for it.

Not only does cauliflower get high marks just because it’s low carb and tastes like nothing but it’s also great for you too! Cauliflower has a host of health benefits. For one, it’s a member of the cruciferous family of vegetables meaning it’s high in sulforaphane. Sulforaphane has been showed to kill cancer stem cells, improve blood pressure and kidney function. Cauliflower also contains anti-inflammatory nutrients such as indole-3-carbinol. It’s packed with vitamins, minerals, and antioxidants too. You can eat great tasting faux mashed potatoes and feel great about doing it knowing you’re giving your health a boost too!
All in all, this Keto Cauliflower Mashed Potatoes is a great recipe. It’s low in carbs and tastes great. I know a lot of the recipes on Keto Culinary can be a little involved or complicated. That’s because I strive to make the absolute best tasting keto friendly version of a dish that I can. This is one of those dishes where I don’t need to add a bunch of steps or spend a bunch of time making it. It’s amazing and doesn’t need any more help. - Remove green parts and stem from the head of cauliflower. Then roughly chop into 1 to 2-inch squares.
- Boil cauliflower under a fork easily slides into the cauliflower pieces.
- Drain the cauliflower and place into a food processor with the remaining ingrediants. Blend until smooth.
- Salt and pepper to taste and enjoy!
