Keto Peppermint Hot Chocolate

 
When the chilly winds of winter blow and Christmas lights are hung, nothing hits the spot like a tasty mug of Keto Hot Chocolate. It’s creamy, chocolaty, delicious, and perfect for keeping away old Jack Frost. It’s quick, easy, and best of all, it’s super low carb. So, there is no shame in enjoying a steamy cup of this holiday favorite.
 

Keto Hot Cocoa

 
Keto Hot Chocolate is very quick and easy to make. Hot chocolate has 3 main ingredients: chocolate, sugar, and milk. Cocoa powder and Lily’s Dark Chocolate are both very low in carbs. No problem there. Sugar is easily replaced with your favorite keto sweetener. I like Swerve but you can replace that with whichever you prefer. Stevia is a good option too. The only issue left is milk. We obviously can’t use milk. That, we’ll have to replace with unsweetened vanilla almond milk and heavy whipping cream. I had to play with the ratios to get a good balance. At first, I used too much cream and the keto cocoa was somehow too thick and creamy. Something I didn’t even know was possible. The mixture below, however, is just right and super delicious.
 

Peppermint or No Peppermint

 
Why is the keto hot chocolate peppermint flavored? There’s actually a good reason for this. Because we can’t use milk in this recipe we had to sub it out with other ingredients. Which leaves the hot cocoa tasting a little off. Not bad, just not quite right. You know what hot chocolate should taste like so your brain does a little double-take when it’s not exactly right.
 
Enter, peppermint. Putting peppermint in hot chocolate is nothing new. But in this recipe, it serves a strategic purpose. Peppermint is a strong flavor. Strong flavors do a very good job at masking other flavors.  The peppermint completely masks the fact that you’re not using real milk. Between the strong flavor of chocolate and the strong flavor of peppermint, your taste buds have no idea that it’s not a real honest to goodness cup of surgery hot cocoa. It tastes exactly like the real thing.

Instructions
  1. Over medium heat mix the almond milk, heavy cream, Swerve and cocoa stirring until combined. Then add the dark chocolate chips while stirring to avoid sticking to the bottom of the pan. Once the liquid comes to a boil add the vanilla and peppermint extract and remove from heat.
